Pancake day is fast approaching, 17th February. Máirt Inide or Shrove Tuesday is always 47 days before Easter Sunday and it is traditionally a day Christians would confess all their sins before the beginning of Lent.
Before fasting for the Lent season, lets indulge in yummy pancakes. After all, why change tradition? 🙂
Mr. P is the pancake chef in the house. Most Sundays I’m spoilt with his delicious pancakes and because Valentine’s day is also around the corner, why not surprise your other half with heart-shaped pancakes?
I love fresh berries and Agave syrup on top! What is your favourite topping for your pancakes?
Serves 4:
110g self raising flour
1 tbs baking powder
140g caster sugar
1 large egg
150ml milk
2 tbs butter
200g mixed berries
Agave syrup or Maple syrup
Heart-shaped mold
Sift flour and baking powder together into a bowl
Add sugar and mix
Beat the egg into the milk, then pour it into the flour, whisking until it just comes together (don’t over-mix)
Heat the butter in a small non-stick frying pan
Add 2 tbsp of the batter into the mold and cook until golden
Turn and cook the other side, for about 1 minute
Cook the other pancakes
Arrange berries on top of each pancake
Pour syrup on top and enjoy! 🙂
